Drop a ball down a pyramid of pegs and take whatever multiplier sits in the bucket it lands in. You choose the number of rows and the risk level, which together set how flat or how extreme the paytable is - low risk pays close to your stake almost every drop, high risk mostly pays 0.2x with a 1,000x sitting in the far corner.
Buckets are not hit evenly. The ball's path is a sequence of independent left/right decisions, so bucket k on an n-row board is reached with binomial probability C(n,k)/2^n - the middle is hit constantly and the edges almost never. The paytables are built around that weighting, which is why the centre buckets pay less than your stake and the outer ones pay hundreds of times it.
This is the standard Stake paytable set, so the numbers will look familiar if you've played Plinko elsewhere, and the house edge is around 1% across the configurations.
High risk on 16 rows is the headline: a 1,000x bucket at each end, reached roughly once in 65,536 drops on either side. Almost every other drop on that board returns 0.2x to 0.5x. If you want something that pays most drops, low risk on 8 or 10 rows is the other end of the same game.

No - it changes the shape of the paytable, not the cut. Low risk gives you many small returns, high risk gives you rare large ones, and both are built around roughly the same ~1% edge.
Every round is generated from a server seed that is hashed and shown to you before you bet, combined with a client seed you control and an incrementing nonce. When you rotate your seed the old server seed is revealed, so you can replay every round it produced and confirm nothing changed after the fact.
